Currently is there any way to find deleted data on an ipad 2?

Really, your only chance is to recover deleted data from SQLite databases. Most mobile forensic tools will support automatic data recovery of text based data from these databases. This includes everything from SMS to contacts to application data.

Technically speaking, you may be able to recover deleted data from an iPad this old. It all depends on the version of iOS it's running. If it's still on iOS 4, you may be able to download the full disk image, unencrypted and complete with unallocated space. If it's been upgraded to a later version of iOS, no luck. But you can still attempt recovering releted records stored in SQLite databases (call logs, chats, deleted Skype conversations etc.)
