Zapper investigations (sales suppression software)

Does anyone have any information on investigating restoraunt or other sales supression software (aka zappers) that they could share?

I realize the evidence an investigator would find would be application and platform specific, but I wanted to get an idea of what people have run into and how they approached these investigations. For example, were the systems' OS typically Linux or Windows? Was transaction data stored in databases (and if so what kind), etc.

I've gone through the usual google and forum searches but haven't come up with much (although some of the case law is very interesting).

Hidden executable file, which can also reside on external media, leaving no traces in OS. It would simply modify database, but it has to be customised!! That's not a problem for any skilled programmer, as long as they have access to db (sales journal).
