Is there a reason why I can't see OST files in VSCs?

Corporate scenario, we all run Windows 7 Enterprise SP1, mail is Outlook with Exchange 2010, we have local cache enabled (so have OSTs)

I can see two OSTs on most systems (one current, one older which represents local cache up until we did a migration in July 2015).

However, on a suspect system I'm looking at just now I can see two OSTs as described above, but NO OSTs in VSCs of which there are 6 covering a 2-week period in March/April 2016.

I double-checked on my own system and right enough I have a number of VSCs but none of them contain OSTs although the live system has 1 (I already deleted the pre-migration one to save disk space).

So I'm wondering if anyone knows why this might be?

For the suspect system I have a single-segment DD image, mounted in Arsenal Image Mounter, then used VSSAdmin to access the VSCs. For my own system, it was straight to VSCs via VSSAdmin

The reason for taking this approach is that the user was put on notice of redundancy and at some point cleared out his email and just about all data files from his computer. We've got an amount of emails back through Exchange Dumpster (Recover Folder) and also a PST that he clearly didn't know he had, but we don't know when he started clearing out.

Plus if there's a way around this it would be good to know in future.

P.S. Anyone know of an Exchange PS command that will list when mail items in the Recover Folder were deleted?
