Permission denied on data volume when making dd image.

I recently purchased a Macbook M1 Pro 16 inch. When creating a .dd image of my Macintosh HD, the command copies only 4 of the 6 volumes. When I want to create an image of only my data volume, I get an error message "permission denied" despite SIP (System Integrity Protection) and FileVault being disabled. what could be the problem here?
Command I used: sudo dd if=/dev/diskX of=/destination/path bs=64k
