In the Hex Value interpreter? Same thing as it is everywhere else, of course.
As it's a very basic topic, even beginner's books in forensics assume you know sufficiently much about IT to know what it means. Sammes & Jenkinson: Forensic Computing (2007) is the only title I immediately remember going into the question. (Later editions may also cover the subject, but I have not read them.)
But as the answer is fairly complex, I suggest you try the wikipedia article to start with.
