Could ANY tool such as Cellebrite/MobilEDIT perform an extraction of a pattern-protected Samsung s20? If yes which type of extraction?

No, that's a job for premium-class tools. You can do BFU extraction, and hope it'll hint you the code, but that's uncommon for pattern locks. It's also limited and will only work if firmware version is from 02.2022 or earlier since Samsung patched exploit used by those tools in March 2022 firmware.
