I'd say that a candidate should be honest and state they are applying for various roles with other companies. However, the candidate should then use specific points about the company they are applying to in order to highlight to them why they wish to work there. These may be points they establish from their website or from the interview itself.

If you make it appear like the company is on a long list of others, unless you are exceptional, I doubt many companies will be all that inspired by you. Hence, you need to ensure you let your enthusiasm for the company, area and role come over - but not in a dishonest way.

For example,

"I am interested in working ultimately in expert witness work and hence, I'd like to work for you as I believe you could facilitate this within my career".

"I am interested in the fact your company can offer me a bespoke training program…"

"Your company has a great reputation and I really like the area. I am already settled here with my family/gf….."
