Can anyone recommend a tool that can acquire an image from a MACBook Pro? Specifically something that can run as a standalone .exe (does not require an install)

It depend of your budget, Macquisition from BlackBag Tech does a great job.

You should be able to boot from external media to acquire the drive. I've found that Paladin generally works well with Macs and supports a UEFI boot.

Main issue I have found with those is accepting an external keyboard and or mouse, plus the thumb drive with the tool on it.

Doesn't happen with all, but sometimes it's a pain.
