I'd probably say the Hoog & Strzempka book is the best on the market at the moment.

Given that books take a long time to get to the shelves you are unlikely to find many books addressing iOS5 forensics. I'd look into the web resources available instead.

I actually have that book and it does not address iOS5.x. Also, you should notice it was published Jun 2011, way before iOS 5.x.
