Is it possible to use FTK to decrypt a file or files, if so how would it be done?

Look at Access Data's PRTK (Password Recovery Toolkit) to see what files types it can attempt to decrypt.

You can decrypt from within FTK - click Tools>Decrypt.
You are able to decrypt EFS, Office Files, Lotus Notes etc. Check out Page 129 in the user manual.

PRTK and DNA are more suitable for the heavy lifting.

There are other tools available as described above.
