Clearly it has ID and collection covered. It can cover preservation if you take the approach of preservation through replication. It could conceivably be used for processing, analysis, review and production, however it's perhaps too feature rich for attorney review, and although it contains all the power of most ECA tools, it's not streamlined for that.
AccessData has specific eDiscovery tools in their line-up, and going forward they will use FTK's processing and search tech, which is a good thing.

In my opinion FTK's scope overlaps mostly with identification, collection and analysis (to an extent). As Patrick4n6 mentioned, there are dedicated tools for e-Discovery processing, review and productions and AccessData is competing in those verticals with products such as AD Ediscovery, AD ECA, Summation and Discovery Cracker.
