I have been asked to provide my agency with a forensic wish list for the upcoming fiscal year. We already have an EnCase and FTK license, and have a Cellebrite UFED. Can someone help me out with some more equipment I should ask for?

It's been some time since I came across pure wish lists – usually some kind of need must be demonstrated as well if there should be chance of getting anything.
Why not look over the jobs your lab did over the past year – particularly for things that either could not be done at all, because of lack of tools or equipment, or things that were done less well that you wished. Or perhaps routine jobs that could be done faster with the right gadget? Or even the odd back-in-your-face project from hell that demonstrated a lack of equipment or competence.
Or, if you have someone concerned with business development, check if there are plans for the next year that need to be supported by new tools or equipment.
I'd make sure that your computing hardware is up-to-scratch, great opportunity for more memory, disk, processor and bigger screens …
Ensure that your backup is capable of handling the size of your data sets, UPS for all servers & ideally desktops.
These are the sort of things that almost always have a justification for need as computing has this rather annoying habit of moving on when you blink, and everyone else is ahead of you very quickly !
