I know that FTK does not reconstruct RAID's, but just wondering if an external hard drive is a RAID and hooked to a computer via USB, would FTK see it as a single drive and image it?

If the external drive is a RAID array ie. Buffalo TerraStation you could choose Logical Drive and image it. However not all USB drives are RAID. I have several Maxtor USB and Seagate FreeAgent USB drives that are all displayed as Physical and Logical drives.
