There is a forensic software package called "Wolf" that is scheduled to be released Sept 3rd. Has support for 2G and 3G Iphones and I believe the phone does not have to be jailbroken. You can get more info at http//www.sixthlegion.com

It can be if the phone is jailbroken and has SSH installed. An investigator can then SSH into the phone and push an image out via DD. You would have to hope the suspect hasn't changed the default password (alpine).

Every iPhone has a computer it's synced with. By using MacLockPick you can acquire all the information contained on the iPhone and more (like deleted contacts, deleted SMS messages, etc).
