Single eSATA isn't going to cut it. You're going to need 2 eSATA or an ExpressCard port, or eSATA combined with USB3 for your destination drive.
Unfortunately I still haven't seen dual eSATA nor eSATA combined with USB3, nor have I seen a USB3 write blocker yet, so ExpressCard is still required to do full speed acquisitions. That is unless it changed in the past 2 months. I haven't gone looking for hardware that recently.

Dell M6500/M6600 has dual drives and an eSATA port. Rock solid (unless you're a certain one of my ex-colleagues -)). It is on my shopping list.
A single eSATA port may be sufficient. I'm carrying dual drive docks everywhere these days. But, an ExpressCard is more of a sure thing.
I am also looking at the latest Mac Book Pro with Thunderbolt. Alas, no writeblockers for that on the horizon, either, but for writing to a destination drive, it'll scream….
