So to summarise is it better to boot using a boot cd and use dd to make an image or boot using FWTDM and create an image?

The reality of what you're asking is that any opinion shared will be based upon experience and knowledge (ideally). So to answer your question we need to know your experience and knowledge, your skills and tools, and your comfort level. And _these_ are key in making the decision.
Using a boot CD or firewire target disk mode - both can be used but both bring strengths and weaknesses, and both require that you are willing to take a risk. If the system is not set to boot from the optical device first. If Windows is installed. And removing the drive brings its own risk - damaging the computer.
So, without knowing your details, there really can't be a better solution to your question, because the answer is based directly upon you and your team. Knowing the strengths and weaknesses to each approach is key. If you have access to a system in your lab for testing it would be good to explore each route and determine your first choice, second choice, etc. Because you may need to be comfortable with two or more routes given the dynamic nature of technology.
