So i was thinking instead of working on commercial solutions while performing forensic investigations is to try open source solutions,

I know OSAF and Santoku work for Android mobile phones,

Is there any other open source solution that works for all phones (Symbian,Windows,RIM,iOS,Android).. instead having different solutions for specific phones.

A chance for people to try things at home perhaps..

I think that one of the issues that you're going to have here is that you're asking for an open source, free solution for something that really requires corporate backing to put together.

There are also iPhone and iDevice backup (synced to iTunes) analyzers

There are tools available for the analysis of logical files extracted from mobile phones; for example, the SQLite Browser, as well as Mari's PList parser (http//az4n6.blogspot.com/2012/09/iparser-automated-plist-parser-release.html).

Looking around on Google, it's pretty easy to find some of the various toolkits
