Possible to have persistent volume encryption on a VM?

Let's say you're running a live OS such as Kali or Tails in a VM, is it possible to have a persistent volume?

From using Kali in a pentesting role, a Kali VM instance does have persistence. If you are running Kali from a flash/thumb drive, it will not. There are instructions on the Kali website (https://docs.kali.org/downloading/kali-linux-live-usb-persistence) on how to build a usb with
persistence.

In regards to Tails, there are instructions on how to build persistence into a USB image however that does defeat the purpose of an OS that offers near perfect anonymity
