Speed from Geolocation Data in iOS 10.1?

I would like to determine the traveling speed of an iphone 6s running iOS 10.1 with the Apple map app being actively used. The map app was opened, the destination entered, directions requested and the app left open and running for approximately 2 hours before the time at which the speed is in question.
The data from the iphone was downloaded and stored 12 days after the event time. I have been told that the update to 10.1 caused all Apple map app data to be hidden and the file shows zero data.
The car does not have any built-in geolocation features, so that is not an alternative method of finding the speed.
Is it possible to find enough geolocation data points in this instance to determine (even roughly) the speed of the car the iphone was in?
