Is there a way to know when an email was first read (or marked as read)? - Outlook365 - Exchange Server

For civil legal purposes.

The user uses Outlook365 synced with an Exchange Server.

They testified they never clicked or saw this email in the first 15 minutes after they received it.

Is there some metadata somewhere that would be able to let us know if they are lying or telling the truth?
